About Jane Simmons

Jane Simmons is a Registered Dietitian currently employed as a consultant with MNT, INC. Jane has worked in the long term care field for a number of years and enjoys the challenges and interactions with this population. Jane holds a BS in Institution Administration/Dietetics and MS in Public Health/Nutrition from Western Kentucky University. She has been a RD for 40+ years.

During that time she has been employed as a food service manager, clinical dietitian, consultant dietitian, healthcare specialist and instructor at WKU. Jane was the Dietetic Internship Director until her retirement at WKU in 2020. During her career she was active in the district and state levels dietetic association and held a variety of offices.
